Grilled Lime Chicken & Black Bean Sauce

Mmmmm,

I love this recipe. The lime adds some nice zing to the chicken, without being overpowering like a lemon would be, while the black bean sauce adds a tasty, smooth layer that tops it all off nicely. And, this is a healthy recipe - full of taste while not adding any extra meat to your middle.

Great as a lunch leftover as well!

Serves 4ish

Ingredients
Grilled Chicken
- Juice of 4-5 limes
- 2 tsp EVOO
- 1 red onion, thin sliced
- 1/2 cup fresh chopped cilantro leaves (keep the stems for the sauce below)
- 1 tsp dried oregano
- 1/2 tsp salt and pepper each
- 4-6 boneless, skinless chicken breasts (bout 1.5 lbs)

Black Bean Sauce
- 1 can black beans (drained and rinsed - about 15oz)
- 2 bay leaves
- 2 cloves minced garlic
- stems from cilantro leaves, chopped
- 1/2 tsp salt and pepper each

Directions
1. Combine lime juice, olive oil, cilantro leaves, oregano, salt and pepper in glass bowl. Chuck in the chicken. Mix well. Cover and marinate 2 - 12 hours. Turn chicken every now and then. Be sure to keep in the fridge if marinating over 2 hours.

2. Prep the sauce. Throw all Bean Sauce ingredients into a pan with about a litre of water, and stir em up. Bring to a boil then reduce heat to a simmer, uncovered, for about 1.5 hours. Remove bay leaves. Put sauce into a blender to mix. You'll probably want to let it cool down a bit first. Add water if sauce is too thick for your tastes.

3. Preheat oven to 350° and light up your grill. Line bottom of casserole dish with the red onion. Put  chicken in an even layer in the dish, then pour remaining marinade over the chicken. Cover dish with aluminum foil and put in the oven for 20 minutes. Remove chicken breasts and set aside. Put marinade/onions back in oven for another 10 minutes. After you take the marinade out of the oven, keep it for grilling.

4. Grill the chicken over high heat. Should be about 2 minutes a side. Drizzle with marinade while cooking. Poke with a fork to check doneness, clear juice means cooked. Serve chicken with the red onions, then pour a healthy helping of the Black Bean sauce over everything. Works nicely with a side of sour cream, guacamole or tomatoes, and a nice green salad.
